Ok, it’s Day 2 of the A to Z Ingredients theme for Vegan Mofo (the Vegan Month of Food). Frankly, I’m shocked to be posting two days in a row. Even more shocking – I’m prepared for Day 3! This productivity thing is pretty addictive.
Today’s ingredient is Broccoli! And boy, do I have a lineup for you. There’s even a recipe from Yours Truly! Let’s dive in, shall we?
Today I had the privilege of sharing a guest post on Running with Real Food, run by Deryn Macey. As a happy coincidence, the recipe in the post is chock full of broccoli! It’s like it was meant to be. Behold, the Bountiful Broccoli Quinoa Bowl.
This right here is leaping off the page, begging me to eat it. It’s the Vegan Cheesy Baked Potato from Serious Eats. Seriously, if it weren’t after 11pm, I would go and make this right now. You should make it. It looks SERIOUSLY tasty. All puns 100% intended.
This one has me feeling a bit conflicted. It’s the Cheesy Broccoli Spaghetti Squash Casserole from Keepin’ It Kind. I’m conflicted because you may know that I have very strong opinions about how spaghetti squash should be cut, but this casserole may be the exception to my strictly enforced rule. That is because in casserole form, shorter strands of spaghetti squash are actually desirable. So, just this once, I say it’s ok to cut the squash lengthwise. But otherwise, you know what to do.
Back to this casserole. Doesn’t it look delectable? I’m sure it will have a place on our menu very soon.
Last, but certainly not least, is the Roasted Garlic Sesame Broccoli from Produce on Parade. I love that the broccoli is given center stage and enjoyed in all its cruciferous glory.
